A few words about our Chef...
Born in a restaurateur family, William has fallen in love with this profession.
In 1984, when 15 years old, he decided to learn how to cook in the "Mederic School".He made a training in the "Bellecour" restaurant located in Paris.
In 1989, he entered the team of the "Pavillon de la Tourelle" like a Commis Chef, near Paris. 4 years later, he became the Assistant of the "Bellecour" Japanese Chef.
With a wealth of experience behind himself, William decided to fend for himself like a Chef.
In 2002, after different experiences in establishments of quality, William and his spouse, Carole, bought the Hotel Castle of Brelidy. The choice of this establishment, in the Cotes d'Armor, was a return to basics.
Carole, as for her, worked in famous Parisian hotels.
Since 2002, they put their professionalism and dynamism at your service.
