A few words about our Chef...
The Castle Hotel and restaurant Brélidy Delights Margot invites you to discover the inventive and refined cuisine of Mark BRYANT, our Chief cuisine.Né a Swiss German mother and English father, Mark Bryant has always been passionate food and flavors from elsewhere.
During his first professional experience at the castle-starred restaurant "Le Vieux Castillon" in France, he had immediately fallen in love with our country and its gastronomy and inventive. This experience led him to work for fine dining while feeding his desire to discover and experience the cuisines of the world.
After France, he pursued his career in Switzerland "Fischtube" Zurich House renowned for its seafood and fish. After having climbed the ladder in the kitchen, it was in England he returned as head chef of "Café Shore" gourmet restaurant in Poole, House whose reputation is well established.
But France and its cuisine he misses and Mark decided to settle in Vannes, where he discovers the secrets of cooking traditional Breton before returning again to the haute cuisine even more enriched with new ideas.
